Asparagus Extravaganza: Celebrating the End of Spring and the Start of Summer
The end of spring is always a bittersweet time for me. I love the fresh produce that's available in the spring, especially asparagus. But as the days get longer and the weather gets warmer, I know that summer is just around the corner. That means it's time to start thinking about all the delicious summer recipes that I'm going to make!
One of my favorite things to do with asparagus is to roast it. It's so simple and easy, and it brings out the best flavor of the asparagus. I like to roast it with olive oil, salt, and pepper, and then I add a squeeze of lemon juice at the end. It's the perfect side dish for any summer meal.
Another great way to enjoy asparagus is in a salad. I like to add it to a simple salad with mixed greens, tomatoes, and cucumbers. Then, I top it with a vinaigrette dressing. It's a light and refreshing salad that's perfect for a hot summer day.
Here's a simple asparagus recipe that you can try at home:
Roasted Asparagus with Lemon Juice
Ingredients:
1 bunch of asparagus, trimmed
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 lemon wedge
Instructions:
Preheat oven to 400 degrees F (200 degrees C).
Toss asparagus with olive oil, salt, and pepper.
Spread asparagus in a single layer on a baking sheet.
Roast for 10-12 minutes, or until tender.
Squeeze lemon juice over asparagus before serving.
